Halibut belongs to the genus Hippoglossus. It’s the biggest flat fish that exists: its size can reach 3 meters long. Its elongated body is gray-blue, its mouth large and its teeth curved. Its flesh is white, firm and lean; it releases fine flavors, while having only few bones.
