Know your product

Asparagus has been cultivated in the Mediterranean region since Antiquity. This vegetable is eaten more and more nowadays, and mainly raw. The heads release most of the flavor. Asparagus tastes slightly like artichoke. Our white and green Asparagus are not collected the same way: the white ones are picked as soon as they come out of the ground, whereas the green ones are harvested when they are 15 cm high. We also supply purple Asparagus, as well as mini-Asparagus.

How to buy

Choose firm Asparagus stalks of a similar thickness. They have to release a slight smell of wheat. If the bottom of the Asparagus is too dry, it indicates it was picked too long ago.

how to keep

Put your fresh Asparagus stalks in a bowl filled with 2.5 cm of water or wrap them in a wet paper towel. Then they will stay fresh for up to 4 days.

Tips

If you serve Asparagus as a starter, consider an amount of 300 g for each guest.
