Foie-gras is one of the symbols of French gastronomy. It comes from the livers of geese that have been fed with a corn mixture rich in fat. The liver is then greasy, meltingly soft and releases a really fine and delicate taste.
Mousse, pâté or Foie-gras block are usually eaten on toast that are plain or flavored with nuts or figs. When it is whole, it can be eaten with steamed apples covered with spices.

How to buy

Foie-gras should have a nice color and no splotches, the texture should be smooth and fine, and it should be firm but not hard.

how to keep

Keep your whole Foie-gras in the fridge for 6 days, wrapped in a cloth. If it’s canned, you can keep it for several weeks in a cool and dry place.

Tips

Keep your Foie-gras at room temperature for 40–60 minutes before serving, it will then release all its flavors and its softness will be optimal.
