Mirror Carp is a species of fish from the Cyprinidae family, living in fresh water throughout Europe, North America, Asia and the Far East. In some cultures, it’s a symbol of perseverance as it always tries to swim upriver.
It’s covered with brown scales; the sides are yellowish and the stomach whitish. Mirror Carp is a low fat fish, but very rich in phosphorous and Vitamin B12.

How to buy

Choose fleshy Mirror Carps. The flesh must be firm and elastic.

Keep your Mirror Carp in the fridge for up to 2 days.

Tips

To avoid an aftertaste of mud, soak Mirror Carp in fresh water with a trickle of vinegar over night before cooking.
