Know your product

Glycemeris glycemeris is commonly called Amande Clam or Dog Cockle. Its shell has a beautiful gradation of colors, from white to red to brown. It is reminiscent of marble. Amande is very rich in iron, and its flesh is thick, tender and delicious.

How to buy

Choosing good Amande Clams is very important. They must still be living: their shell has to be well closed, or the Amande should refold when you touch it.
