Mozzarella is a fresh pasta filata — stretched-curd — cheese. Originally, it was made with water buffalo milk, but now we use cow's milk. This delicious cheese releases sweet and tart flavors. This is the most eaten cheese in Italy, and it is used in many recipes, the most common being salads and pizzas.

How to buy

Choose Mozzarella when it’s really white and soft.

how to keep

Keep Mozzarella in the fridge until the use-by date. Once open, use it within a few days.

Tips

If you want to cut very thin slices of Mozzarella, just place your cheese in the freezer for an hour, so that the contours become harder making it easier to cut.
