Yuzu is a citrus fruit that comes from Southeast Asia; it’s a hybrid of mandarin and a variety of lemon called Citrus Inchangensis. Close to grapefruit in character, although a little smaller, it carries a similar aroma. Its acid taste also recalls the taste of mandarin and lime. Its zest is very popular as a condiment in Japan. A Dutch beer flavored with yuzu was even marketed for a few years.

How to buy

You have to choose very yellow yuzus — the color is the sign of their ripeness. The fruit has a naturally irregular shape, so you needn’t look necessarily for yuzus with a symmetric shape.
