Xiphias gladius or Swordfish lives in the open seas. It can reach 5 meters long; its bill is flat and equals the third of its total length, what explains its nickname of “Swordfish.” It lives generally off the west coasts of the Atlantic Ocean, as well as in the Mediterranean Sea, the Baltic and the North Sea. Its white flesh is firm and striated, semi-fatty with fine and delicate flavors, similar to tuna. It’s rich in vitamins A, B3, B6 and B12, potassium and phosphorous.
