The scientific name of Sturgeon is Acipenseridae. It lives exclusively in the Northern Hemisphere, and has existed for 100 million years. This fish is filled with bony patches, and has quite a long bill, with a chin covered with sensory barbels. It can measure up to 4 meters long, and weigh up to 500 kg. It’s fished especially for its eggs: the very fine and famous caviar. Its white, firm, dense and fat flesh is appreciated for its subtle flavor.
