Pollachius virens is commonly called Saithe, Coalfish, Boston Blue or Coley. It reaches 90 cm long on average. It lives near rocks, mainly in the Atlantic Ocean, the English Channel, the North Sea, the Baltic Sea, and the Mediterranean Sea. Its back is brown-green in color, its sides and stomach are lighter and yellow-spotted.
Saithe is rich in protein, minerals, vitamins A and B. Its firm and delicate flesh releases subtle flavors, similar to Cod, although finer in taste.

How to buy

Choose Saithe with a tight skin, shiny scales, and which releases a pleasant sea smell.

Tips

You can salt and smoke Saithe to get a salmon-like, orange coloration.
