The scientific name of Pike is Esox lucius. It lives in the fresh water of creeks, rivers, lakes, and ponds. It has a very long shape, fine scales and a greenish, yellowish coat. Its flesh is tight, both soft and crunchy, with a strong taste that is slightly like Monkfish.

How to buy

Choose fresh and not too big Pikes to give maximum flavor. River Pikes are usually tastier.

You can keep Pike in the fridge for up to 2 days.

Tips

To avoid an aftertaste of mud, soak Pike in fresh water with a trickle of vinegar over night before cooking.
