The scientific name of Pike is Esox lucius. It lives in the fresh water of creeks, rivers, lakes, and ponds. It has a very long shape, fine scales and a greenish, yellowish coat. Its flesh is tight, both soft and crunchy, with a strong taste that is slightly like Monkfish.

How to buy

Choose fresh and not too big Pikes to give maximum flavor. River Pikes are usually tastier.
