Parsnip comes from the Mediterranean region. It was already eaten in Antiquity, especially by Ancient Greeks and Romans. In the Middle Ages, it was used in the same way as potato is today. The texture of this vegetable is very close to the turnip but the flesh is yellow and quite sweet.

Tips

To avoid your Parsnip from rotting, wrap it in some absorbent paper, and put it in a plastic, perforated bag. It will keep its humidity this way.
