Emmental is a hard cheese from Switzerland. Made from cow's milk, a wheel of Emmental has an average weight of 100 kg. This is why this cheese is usually sold in bricks. The holes in this cheese are due to the creation of gas that cannot escape during the cheese-making process as the rind is so airtight. The more holes, the better the cheese!
Emmental goes with a lot of food. You can serve it plain, with bread or with other savories: meats, lamb, endive, cauliflower, and fennel. You can also serve it with fruit: pear, fresh figs, dried apricots, nuts, or white grape. When it comes to condiments, it goes perfectly with curry, cumin, or turmeric.

Choose Emmental with big holes, as this is a mark of its quality.
