Dover Sole

Know your product

Dover Sole is a flat fish, which lives on the sandy floors of the seabed. The legend tells that sea god Neptune walked on it, flattening it forever. It can adapt its color to that of the floor to camouflage itself. It moves by waving. Its face is brown, with red and brown reflections, and dark spots. Gourmets appreciate its fine, firm and delicate flesh. Some people even consider it the finest fish flesh ever.

We supply different species of Sole: common Sole (Solea vulgaris) or tropical farmed Sole (Cynoglossus).

How to buy

The Sole skin has to be shiny and tight, and its flesh firm and elastic.

how to keep

Keep Sole in the fridge for 24 hours at most, it is best served immediately.

Tips

Prepare delicious meunière styled Soles: coat them with flour and fry them with butter.
