Belgian Endive is also called French Endive and Witlof, which means "White Leaf" in Flemish. A Belgian farmer invented Endive in 1830. The man first wanted to dry up chicory plants to add to his coffee, which lead him to creating this vegetable with its delicious white crunchy leaves, that turn yellow at their ends, and have a pleasant and slightly bitter taste.

How to buy

Choose firm and shiny endives, with no spots or dark leaves.

You can keep Belgian Endives for a week in the fridge if you wrap them in wet linen.

Tips

You can use the largest leaves of endives like a basket, in which you can serve Eggs Mimosa, raw vegetables or even sauces.
