Norway Skrei with chorizo scales and sweet pepper piperade

Ingredients

For 4 people :

o 800 gr of Norway Skrei fillet.

o 6 bell peppers (green, red and yellow)

o 16 thin slices of sweet chorizo.

o 4 tomatoes

o 3 garlic cloves

o 1 onion

o 5 cl of olive oil

o Salt.

Preparation

Preparation: 20 minutes.

Cooking time: 20 minutes.

Dip the tomatoes in boiling water for 15 sec. and peel them. Cut them in quarters, remove the seeds, and slice them thinly into cubes.

Split the bell peppers in two, remove the seeds and the white parts. Cut them into lashes.

Peel the onion and slice it thinly into small cubes.

In a frying pan, heat 5 cl of olive oil.

Brown the onion until golden. Add the bell peppers and the crushed garlic. Have them sauteed for 2 minutes, and then add the tomatoes. Let them stew for 15 minutes.

Pre-heat the oven at 210°C (th7).

Meanwhile, cut the Skrei fillet into 4, and cover the flesh part with the chorizo slices. Brush with a little olive oil and place them in an oiled oven dish.

Bake for 15 minutes, by monitoring the coloration. If the chorizo slices turn brown too quickly, cover with aluminum foil.

Spread the peppers piperade on the plate and place the Skrei with chorizo scales on the top.Moisten with the fillet juice from the pan, and serve immediately.

Tips

Choose large spanish chorizo for a better looking.
