Sander lucioperca or Zander usually lives in fresh water. It comes from German "Zahn," which means "tooth," in reference to its two prominent canines, although they are not so sharp. It has a thin and long head, an elongated body and big dorsal fins, one with thorns. It’s greenish grey with vertical dark stripes. Its white and fine flesh is firm, delicate, and delicious. It is an excellent source of high quality proteins, vitamins A and B12, calcium, phosphorous and potassium.
