Limanda limanda is also called Dab. It’s a fish with a flattened and asymmetric body. Surprisingly, at birth it has both eyes on the same side, but sometimes one of its eyes moves toward the opposite side as the fish grows. Mostly brown-red or green-olive, with rusty-colored spots, it’s one of the most popular flatfish of restaurateurs. It mainly lives on the sandy floors of the Northwest Atlantic Ocean, and it can reach up to 60 cm long. It’s a very lean fish, but rich in protein, vitamin B and minerals. Its fine and delicate flesh releases a subtle flavor with a very pleasant taste.

How to buy

Favor Dabs with bright colors, prominent eyes, and a slight cucumber smell.

Keep Dabs in the fridge for up to 2 days.

Tips

Dab is really tasty when it’s cooked in the oven or in foil. These cooking methods are also good for keeping the flesh together.
