Glycemeris glycemeris is commonly called Amande Clam or Dog Cockle. Its shell has a beautiful gradation of colors, from white to red to brown. It is reminiscent of marble. Amande is very rich in iron, and its flesh is thick, tender and delicious.

Choosing good Amande Clams is very important. They must still be living: their shell has to be well closed, or the Amande should refold when you touch it.

Even if they are usually eaten raw with lemon juice, we advise that you serve cooked Amande Clams. They are very popular when they are stuffed.
