Green peas (petit pois) are the seeds of peas cultivated before maturity. Fresh, soft and slightly sweet, they can be cooked English or French style. The first includes cooking them in salty, boiling water. The French style is a stewing in butter, with onions and lettuce. Petit pois are especially high energy, green vegetables: very rich in vitamins C, and K, folic acid, manganese and fiber, they are also a source of zinc, magnesium, vitamin B6 and phosphorous.

Keep fresh Petits pois in a plastic, perforated bag in the fridge for up to 4 days.

Tips
