Papaya comes from Mexico. Slightly bitter, it is usually eaten plain or with a trickle of lemon juice. In Thailand, papaya is used as basic ingredient for the “som tam salad”. Also, the latex produced by its green fruit is widely used in pharmaceutical products or in the manufacturing of chewing gum. Papaya is really rich in vitamin C and potassium. It is a complex, delicious, and slightly bitter fruit, and it releases a peppery, slightly sweet taste.

How to buy

Choose papayas with a smooth skin that reacts to a slight pressure of the thumb. Ripe papayas are mostly yellow.

how to keep

To ripen papayas, place them in a paper bag, loosely closed. Once ripe, you can keep them in the fridge for up to a week.

Tips

With pieces of green papaya, you can prepare a marinade to tenderize the flesh of mollusk.
