Know your product

Mangosteen comes from Southeast Asia, where it has been cultivated for millenniums. It’s the size of a golf ball, with a very thick skin. The white, sweet and sour flesh is naturally divided into 5 or 6 segments.

How to buy

Best to pick purple or purplish mangosteens and avoid the blue or black ones. The fruit is ready when it reacts to slight pressure from the hand.

how to keep

You can keep mangosteens for 4 or 5 days at room temperature, and for a week in the fridge.

Tips

To peel a mangosteen, you have to make a small circular cut to the skin. You can serve them plain, or make a puree that can be used in sorbets, with dairy products, or in pastries.
