Pecten maximus is commonly called King Scallop or Great Scallop. It has a big fan-shaped shell. The male is white-ivory in color, while the female is red-orange. It moves by shutting its shells and expelling water. It mainly lives in the Atlantic Ocean and the Mediterranean Sea, or in the USA.

Our King Scallops mainly come from Scotland or France. Its flesh is very rich in iron, and is appreciated by gourmets for its fine, tender and subtle taste.

Choosing King Scallops is very important : the nut loses half its weight by cooking , so take that into account when you place your order.

Keep King Scallops in the fridge for a few days.

Tips

We advise you not to cook your King Scallops too much, or they will become rubbery. You can remove them from the heat when their flesh is opaque, and when the center remains slightly transparent. Cook for 1 or 2 mins each side.
