Cultivated over 2,500 years ago in Egypt, Cauliflower is also called Cyprus Cabbage. It is highly appreciated in some countries, especially in France where it is used as basic ingredient in many popular recipes. You can serve it raw, as crudités served with mayonnaise sauce, in salad, as an appetizer or cooked.

Choose firm and heavy Cauliflowers, with no blemishes or spots; beautiful green leaves indicate their freshness.

Keep your unwashed Cauliflower covered in the fridge for up to 1–2 weeks.

Tips

Cauliflower is sometimes slightly bitter. To reduce bitterness, you can add a trickle of milk in the cooking water.
