Salvelinus alpinus is the most common freshwater fish in the Northern regions. It’s the one fish of certain Arctic lakes: at the end of last glacial age, as very cold waters were the safest zone absent of predators, the Arctic Char took up residence there. It is a dark blue or blue-green fish on its back, with silver and pink-spotted sides and a white stomach. Its flesh is fine and white, with a delicate taste. It contains a lot of vitamins A and B12, potassium, phosphorous and calcium.

How to buy

Arctic Char must have a bright color, shiny scales, prominent eyes, and should release a pleasant freshwater smell.

You can keep Arctic Char in the fridge for up to 2 days. Avoid freezing it.
